Good food also comes up from the street level, and many of Thailand's most popular dishes can be found at the smallest food stalls and restaurants. And there is the influence of China, India, Malaysia and other neighbouring countries. So all these different factors come together under the label "Thai food", and you will find them in varying degrees at any Thai restaurant you care to visit, anywhere in the world.

One of the most distinctive aspects of the cuisine is its use of herbs and spices. With regard to the spices, some Thai dishes are very hot, but by no means all of them. The herbs have another function, in addition to providing flavour, in that they all have to varying degrees various medical and therapeutic benefits.

 

Most of Thais eat steamed rice , though in the North or North east there is a long tradition of eating glutinous or sticky rice. Rice of the meal is kept in the  larger bowl and  ladled out by the host or a server, so the  guest will start with a plate  of rice ,onto which he or she places spoonful from each other of the dishes spread out the table .

Essential to each meals is s YUM (salad) ,a hot, tangy  . salad made from lime, herbs, chilli and salad leaves with a choice of meat, seafood or vegetable . Soup is not an appetiser before the main meal: it is there to add

moisture , and is usually spooned onto the  rice to bring out the flavour of the ingredients

 

The soup maybe spicy or plain, and the spiciest is  TOM-YUM , usually made with  fish or seafood: shrimp is by far the most popular ingredient, as      TOM-YUM-KUNG

Thai curries differ from Indian curry in that there are usually made from the fresh, rather than dried ingredients. Many use coconut cream as their chief ingredients, with duck, chicken ,pork, beef ,sea food oarfish being added after the cream has been brought to the boil. Massaman curry has Malay origins and is one of the most frequently seen curries in Bangkok restaurants.

A fresh fish cleaned and wok-fried in oil  is not only quick and easy , it is also very satisfying . Steamed  fish is some what more elaborate and usually involves a topping of colourful and      tasty ingredients such as Chinese celery, onions, lemongrass , garlic, preserved Chinese plum and others. Sometimes a whole fresh fish is wrapped in a banana leaf to preserve all its natural juices and  grilled over a charcoal fire. Large shrimps are barbecued with the head still on to retain its natural moisture ; squid are parboiled to keep their creamy texture.
